Grapefruit, Avocado, Little Gem, and Pistachio Salad

Bright citrus segments with creamy avocado, crunchy pistachios, and a light grapefruit vinaigrette.

Ingredients

Salad

  • 2 little gem lettuces, or 1 small butter lettuce
  • 1 grapefruit
  • 1 avocado
  • ¼ cup pistachios, chopped
  • Optional herbs: mint, dill, or chives

Dressing

  • 1 tablespoon grapefruit juice
  • 2 tablespoons olive oil
  • ½ teaspoon honey
  • ¼ teaspoon kosher salt
  • Black pepper

Method

Wash and dry lettuce.

Tear or cut into bite-size pieces.

Segment the grapefruit:

  1. Slice off the top and bottom.
  2. Cut away the peel and white pith.
  3. Cut between the membranes to release grapefruit segments.
  4. Save some juice for dressing.

Whisk together dressing ingredients.

Right before serving, slice avocado.

Toss lettuce, grapefruit, avocado, pistachios, optional herbs, and about half the dressing.

Add more dressing only if needed.
