Autumn Jewels Salad

A layered, mosaic-style fall salad — sweet fruit, crunchy nuts, creamy cheese, peppery greens. A potluck stunner.

Ingredients

Base

  • 10 oz arugula
  • 10 oz baby kale (or spring mix)

Fruit (pick a combo — see substitutions)

  • 2 lbs strawberries
  • 8–10 figs

Nuts & cheese

  • 1 cup toasted hazelnuts (or pistachios — best swap)
  • 6 oz goat cheese

Dressing (~6 oz)

  • ½ cup olive oil
  • 3 tbsp red wine vinegar
  • 1–2 tsp honey
  • Salt + cracked black pepper

Optional

  • Pomegranate molasses
  • Fresh mint or basil
  • Pomegranate seeds

Method

  1. Toast nuts if needed: 350°F for 8–10 min. Cool and roughly chop.
  2. Make dressing: whisk or shake all dressing ingredients. Taste.
    • Too sharp → more honey or oil
    • Too flat → more salt or vinegar
  3. Prep greens: wash and dry thoroughly. Keep chilled.
  4. Prep fruit: slice just before serving. Medium-sized pieces for texture.
  5. Assemble on a wide, shallow platter:
    1. Spread greens.
    2. Lightly dress greens.
    3. Layer in fruit.
    4. Sprinkle nuts.
    5. Add cheese in clumps.
    6. Optional garnishes (herbs, pomegranate).
    7. Final drizzle of dressing.

Nuts (if no hazelnuts)

  1. Pistachios ⭐ best overall
  2. Marcona almonds
  3. Candied walnuts
  4. Pecans, slivered almonds, cashews, pumpkin seeds

Cheese

  • Goat cheese (default), feta, or ricotta salata

Fruit notes

Persimmons: Use Fuyu (flat, crisp, sliceable, sweet). Avoid Hachiya unless fully soft — astringent if firm.

Pears: Asian pear for crisp/refreshing. Bartlett for soft/aromatic but can go mushy.


Go-to winning combo

If unsure: Fuyu persimmon + Asian pear + pistachios + goat cheese + arugula/greens + simple vinaigrette.


Key rules

  • Don’t overdress — lightly glossy, not wet.
  • Slice fruit fresh — right before serving.
  • Use a wide, shallow platter — bowl tossing kills the aesthetic. 6–7 qt bowl minimum if you must, platter strongly preferred.
  • Balance textures: juicy + crunchy + creamy.
  • Color contrast: red (fruit) + green (greens) + white (cheese) + gold/brown (nuts).
