Warm Chocolate Pudding Cakes

Soft cake edges, gooey center. Restaurant-y but easier than they look. The skill is watching texture, not the timer.

Ingredients

  • 2 oz dark or semi-sweet chocolate (≈ ⅓ cup chocolate chips)
  • 4 tbsp butter (¼ cup), plus extra for ramekins
  • 1 whole egg
  • 1 egg yolk
  • 2 tbsp granulated sugar (cane sugar fine), plus extra for ramekins
  • 1 tbsp all-purpose flour
  • ½ tsp vanilla extract
  • Pinch of salt
  • Cocoa powder (optional, for dusting ramekins)
  • Vanilla ice cream, for serving

Method

Prep ramekins

  1. Butter 2 ramekins thoroughly.
  2. Add a spoonful of sugar (or cocoa powder) to each.
  3. Rotate to coat the inside completely. Tap out the excess.

Make batter

  1. Combine 2 oz chocolate + 4 tbsp butter in a microwave-safe bowl. Microwave 20 sec, stir. Then 15-sec bursts, stirring between, until smooth. Don’t scorch.
  2. Let chocolate cool 2–3 min.
  3. In another bowl, whisk 1 whole egg + 1 yolk + 2 tbsp sugar + ½ tsp vanilla + pinch of salt for 30–45 sec until smooth.
  4. Slowly whisk the chocolate/butter into the egg mixture.
  5. Fold in 1 tbsp flour until no dry streaks remain.
  6. Divide between the 2 ramekins.

Bake

  1. Bake at 425°F for 10–12 minutes.
  2. Check at 10 min. Done when:
    • Edges look set
    • Center still soft and slightly jiggly
    • Top may look shiny in the middle
  3. Do not wait until fully firm — they won’t be gooey.
  4. Let rest 1 min, serve warm with vanilla ice cream.

Notes

  • Make-ahead: Batter can be portioned into ramekins and held on the counter (loosely covered) while you eat dinner. Bake right after.
  • The lesson: texture > timer. Gooey center is the whole point.
  • Doubling for 4: 4 oz chocolate, ½ cup butter, 2 eggs + 2 yolks, ¼ cup sugar, 2 tbsp flour, 1 tsp vanilla.
